Preheat oven to 425ºF (220ºC). Peel sweet potatoes and cut into 1/2-inch (1 cm) thick sticks. Toss with oil, thyme, sage, garlic powder, salt and pepper. Spread in a single layer on a large non-stick baking sheet. Bake, turning halfway through, until sweet potatoes are tender and golden browned. From 25 to 30 minutes.
