Lemon Dill Rice


Ingredients:
  • 3 cups (750 mL) hot cooked rice
  • 1/2 cup (125 mL) diced roasted red peppers
  • 1 tbsp (15 mL) grated lemon zest
  • 1 tbsp (15 mL) chopped fresh dill (or 1 tsp/5 mL dried dill weed)
Instructions:

Toss rice with red peppers, lemon zest and dill.

Tip: If you prefer raw sweet red pepper, add chopped red pepper to rice 5 minutes before the end of cooking.
