Crunchy Cucumber Tomato Salad


Ingredients:
  • 2 cups (500 mL) cucumber chunks
  • 2 cups (500 mL) cherry tomatoes, halved
  • 2 green onions, sliced
  • 3 tbsp (45 mL) chopped fresh parsley
  • 1/3 cup (75 mL) olive oil
  • 3 tbsp (45 mL) red wine vinegar
  • 1 tbsp (15 mL) chopped fresh basil (or 1 tsp/5 ml dried basil leaves)
  • salt and pepper to taste
Instructions:

Combine first 4 ingredients in mixing bowl.

Whisk remaining ingredients together to blend. Add to tomato mixture. Mix well and serve.
